Regulatory sugar taxes now cover more than 50 countries, and bottlers responding to UK, Mexican, and South African levies have reformulated over 1,200 SKUs since 2021 to cut added sugar while preserving perceived sourness and mouthfeel. Malic acid's smoother, less bitter sour profile compared with citric acid makes it the preferred partner for stevia and allulose systems, and formulation labs at three of the five largest bottlers have shifted default acid ratios toward malic-heavy blends in newly launched low-sugar carbonate lines over the past two product cycles, a pattern MMA expects to continue through 2028.
