Single malt whisky production across Scotland, Ireland, and a growing number of American and Japanese distilleries has expanded distilling-grade barley demand well beyond what craft brewing alone drove a decade ago. Distillers specify particular two-row varieties bred for fermentability rather than simple protein content, and several maltsters have signed multi-year variety-specific contracts with growers to secure supply. The Scotch Whisky Association's own data shows new distillery openings running well above the historical average over the past five years, each requiring secured malting supply years before the first cask is filled.
